The pale comes from the best terroirs in the Var region. The grapes are harvested during the night to prevent oxidative phenomena and to preserve optimal aroma. the pale comes from an assemblage of soft pressed juices, selected with the greatest of care, that are left on the lees for a period of time in stainless steel tanks prior to bottling and as a means to give the juices a creamy texture.
