The classic varieties, originating in Bordeaux, are elegant varieties representing the most traditional and reserved winemaking, requiring a growing area with a cool climate and appropriate chalky soil of the Upper Galilee. The “David’s Vineyards” Reserve Cabernet Sauvignon is wonderful and approachable now but will age gracefully over the next decade.
