The Rosé Y comes from the skillful union and symbol of 3 vines coming together. Two native vines, of Corvina and Trebbiano di Lugana, and an international vine: Carmenère.
Part vinified with a soft pressing of the red grapes, part subjected to a slight maceration on the white skins for 8-10 hours. The must is cooled and transferred to a steel tank, where the time necessary for the decantation of the solid parts will remain. After a transfer, the alcoholic fermentation starts, which will maintain a temperature range between 13 ° and 16 ° C. During fermentation, the state of the yeasts is monitored daily, as well as the evolution of the fermentation process.
10% of the blend ends the alcoholic fermentation in new French oak tonneaux, medium roasted. Of the remaining part, 30% matures for about 4 months in oak barriques and tonneaux French of second passage, medium roasting.
Tasting notes: Y is a rosé that expresses complexity and freshness, structure and delicacy, fruity notes and creaminess on the palate, like two opposites that attract each other, but that coexist perfectly in harmony.
Corvina, which represents dominance in terms of percentages, gives typical hints of red fruit and great acidity. Trebbiano provides delicate aromas of citrus and white flowers, giving elegance and length in the aftertaste; finally, Carmenère gives the wine structure and guarantees its stability over time.
Hints such as vanilla and roasting aromas are made evident thanks to the alcoholic fermentation in wood, allowing the wine to obtain those secondary and tertiary hints typical of an evolved rosé wine.
Pairs well with: Excellent accompaniment for aperitifs, first courses such as pasta with vegetables and burrata, second courses based on fish, white meats such as roast chicken, delicate and even ripe cheeses of both goat and cow's milk.
