The fruit is pressed into stainless steel tanks for primary fermentation, and then secondary fermentation using the Charmat method. The flavors are light and refreshing, including green apple, toasty, and a hint of blueberry. Blanc de Bleu is a brút and therefore balanced dry and crisp.
